This milk is St David’s tribute to the First Glass of milk as a child straight from the vat in the dairy. With a thick layer of cream on top, this Unstandardised, and Non-Homogenised milk is as close to straight from the cow as legally possible.
At St David Dairy they understand milk. They also don't try to stray from the fact that milk is best when it is as close to its natural state as possible. They don't produce any 'frothing, barrista or cafe' blends, which are code for 'adding cheaper ingredients and by-products to give white liquid that froths'.
They work hard collecting farm milk, and then process, pack, and distribute the milk. They pick up the phone, clean, test, and all of the 100's of other required tasks, just like any small business.
Their milk is sourced from pasture-based farms, with year round calving patterns, ensuring fresh lactation protein throughout the season. They don't protein standardise, allowing the milk to follow the natural protein seasonality through the year.
Their micro-scale processing also ensures the minimisation of Free-fatty-acids in the milk. Free-fatty-acids are death to milk froth. FFAs can arise seasonally, but the handling of the milk also plays a vital role. Rupturing of the fat membranes in milk can be caused by extreme forces such as high-volume pumping, centrifugal separation and membrane fractionation.
