Free Health Demonstrations

Serene Nature House provides a Free Health Demonstration on important nutrition issues, every Sunday from 11.00am to 1:00pm, at our own premises in Keilor Park. Bookings are essential as seats are limited.

We encourage you to bring along all your questions! We will have guest speakers to cover a wide range of topics including :

  • using our shop ingredients to make healthy treats and snacks for you and your children,
  • assisting new mothers to care for their babies including nappy demonstrations, alternative formula preparation and baby food preparation, and
  • preparing alternative milks from cashews and almonds and preparing alternative drinks using cold brewed teas.

We will also be scheduling Free Health Demonstrations at a community council centre near you throughout 2015. Please watch this space for details of our upcoming community demonstrations (we will post dates and venues soon).

Bendigo Pottery is Australian owned and operated and is Australia's oldest working pottery. On the site is a large factory which continues to make all the Bendigo Pottery. The pottery is fired in natural gas fired kilns and is produced from stoneware. The bakeware range can only be used in the oven and not on the stovetops. It contains no lead, cadmium, aluminium, copper, nickel, chromium, iron, or any other heavy metals - you can trust this bakeware to be non-toxic and it will not leach into your food - no trace metals or chemical leaching from the baking. We are looking forward to demonstrate to our customers the AMC Safe System and Bendigo Pottery.

Why is the right cookware so important?

All materials give off atoms and molecules when heated and when immersed in an acidic or alkaline solution. This includes materials such as metals that are in the cookware we use. The safety of cookware became a very important issue with the rise of non-stick cookware (such as Teflon) that contains the dangerous chemical perfluorooctanoic acid (PFOA).

PFOA-Non-Stick Cookware

PFOA is a synthetic chemical that is used in the manufacturing of traditional non-stick cookware coatings. The coating itself is called polytetrafluorethylene (PTFE) - most commonly known by its trademark name Teflon. PFOA is not present in the finished Teflon, but can be formed as a gas when the coating is subjected to high heat and begins to degrade. PFOA has been labelled a “likely” carcinogen by an independent scientific review panel that advises the U.S. Environmental Protection Agency (EPA). According to the scientists, when Teflon is heated, cookware coated with Teflon and other non-stick surfaces emits fumes that can kill birds and potentially sicken people. Because of these revelations, the EPA has asked the eight major companies that manufacture PFOA to comply with a voluntary reduction program. The companies have agreed to reduce PFOA emissions from their factories and reduce the content of PFOA and related chemicals in their products by 95 percent by 2010, and eliminate emissions and product content by 2015.

Cookware Leaching

Unfortunately, most cookware is made overseas and not in Australia. Some cookware that has been advertised as safe or green raises many concerns regarding leaching, irrespective of whether it contains PFOA or not. The significant issue is in relation to potential leaching of heavy metals such as lead, cadmium, aluminium, copper, nickel, chromium, iron or any other heavy metal. Below we detail some of the concerns with different types of cookware and how the quality of the cookware could impact leaching:

Stainless Steel

There are many grades of stainless steel. Regular stainless steel cookware is made from different alloys including scrap metal. Most cookware sold in stores is an 18/10 grade of steel at best. Because of the softness of this grade of metal, when heated, it expands and the food sticks to the pan. You are then forced to cook with oil and the pan becomes difficult to clean. In addition the natural acids and salts contained in our foods can create a chemical reaction with ordinary cooking surfaces. For cleanliness and safety reasons, your food should be cooked on only high-grade surgical stainless steel. Serene Nature House is proud to supply you the highest quality surgical stainless steel cookware in the world- AMC (a company based in Germany which produces cookware using surgical-grade stainless steel).

Cast Iron

Most porous of all metals. Grease can turn rancid in pores. Some people believe that they can get iron from a cast iron pot. The reality is that iron comes in a ferrous and a ferric form. Your body cannot assimilate the iron (ferric) from a cast iron pan. Cast iron is safe to use when it is enamelled with genuine porcelain ceramic.

Polymer Coated Cookware

Synthetic (polymer) coated, non-stick pans are simply a “plastic” stuck to a metal pan, the most popular metal is anodised aluminium. To make the coatings, a chemically based polymer is melded onto an anodised metal surface. As these synthetic, plastic-like coatings are softer than metal, you can imagine what will happen. With normal use the polymer degrades and starts wearing thin. Ultimately, toxic metals like lead and cadmium can leach into foodstuffs. The coating itself may contain toxic metals like arsenic.

Thermolon Coated Cookware

There is a new line of cookware which boasts a new non-stick material called Thermolon - a Slo-Gel coated ceramic non-stick metal cookware (usually aluminium based metal). It is being billed as the first environment-friendly, PFOA-free, PTFE-free non-stick cookware and uses a ceramic-based nano non-stick technology. Unfortunately, nanotechnology produces nano-particles. The ability of these particles to interact with living systems increases because they can often penetrate the skin, enter the bloodstream via the lungs and cross the blood/brain barrier. Once inside the body, there may be further biochemical reactions, such as the creation of free radicals that damage cells and DNA. Some manufacturers of these cookware claim that there is no use of nanotechnology in Thermolon, however, there are sufficient studies that confirm that the sol-gel method of producing these ceramics involves the synthesis of nano-particles.

Aluminium, Anodised Aluminium and Cast Aluminium

Aluminium cookware are reactive and taint your food with aluminium. When ingested, aluminium is deposited in various bodily tissues and can cause illness and even death; it’s also a risk factor for Alzheimer’s disease. Anodised Aluminium has become a popular alternative to plain aluminium. Aluminium placed in a chemical solution and exposed to electric current builds up a hard, non-reactive surface. This process is called anodisation. The electrochemical anodising process “locks in” the aluminium, but anodisation can break down over time. When new, an anodised aluminium pot is fairly non-reactive; however, with use the surface predictably chips, peels and/or gets scratched. It’s then reactive and leaches heavy metals.

Ceramic glazed Cookware

Ceramic is an inorganic, non-metallic solid prepared by the action of heat and subsequent cooling. Ceramic can refer to stoneware, clay (including terra-cotta), glass and porcelain. Some companies produce cookware using genuine ceramic or enamel coating from glass-like and porcelain materials. The metals that are usually coated with genuine ceramic include cast iron and steel. Poorly prepared enamel results in poor heat distribution. Foods stick and burn. Low-grade glass coating can also leach lead and chromium. Lead can cause reproductive harm and learning disabilities. All types of porcelain-enameled cookware can provide safe food contact surfaces provided that the porcelain enamel is not chipped or cracked. At Serene Nature House, the only genuinely coated enamel cookware we recommend is Le Creuset enameled coated cookware and bakeware range, including their enameled coated cast iron range, their enameled coated kettles and their stoneware baking range and Chasseur enamelled cast iron pots and kettles.

Copper and Tin Cookware

Copper leaches into food when heated, prompting a caution against using unlined copper for general use. Accordingly, the cooking surfaces are usually lined with tin, nickel or stainless steel. Coated copper cookware can lose its protective layer if damaged or scoured. Keep in mind that the metals of the “protective” surface can also end up in your food such as nickel and tin. Tin also has its bad health affects. Tin is thought to affect energy metabolism and can stall brain function by interfering with neurotransmitters

PPD, referred to as Para-phenylenediamine, is in virtually every chemical hair dye, even most hair dyes which claim to be natural. There is now an epidemic of sensitisation (allergic reaction) to this chemical because of over-exposure. The allergic reactions can be severe and require hospitalisation. Long term effects of exposure to this chemical include lupus, asthma, non-Hodgkins lymphoma, and there appear to also be links to breast, uterine and bladder cancer. PPD is expressly forbidden for use on skin because it is such a dangerous chemical. It is permitted for use as a hair dye only if the hair dye doesn't actually touch the scalp. I'm still trying to figure out how hair dye can be reasonably applied without the dye touching the scalp! Unfortunately most permanent hair colouring systems that claim to be healthy and natural contain PPD.

Do-It-Yourself Fermentation Workshops

Serene Nature House is proud to facilitate Do-It-Yourself Fermentation Workshops run by our Resident Specialist Chef, Michael. Michael has been working as a chef for the past 30 years in Melbourne and Sydney. He is now supremely interested in the preservation of food and not just its presentation. Different preservation techniques garner different flavours and health benefits and this is the most exciting thing to happen to food in the past 20 years.We are re-discovering the ancient techniques of wild fermentation. Michael uses wild fermentation techniques; adding salt to vegetables, allowing them to preserve in a controlled manner which produces lactic acid that contains a variety of bacterial strains that are highly beneficial to us. Michael specialises in preparing organic cultured vegetables and will teach us how to make sauerkraut, kim chi, pickled cucumbers, daikon raddish, and much more.
