Quark is a fresh delicate cheese of European origin with a smooth consistency, made in a traditional, old-fashioned way. It is soft, white and un-aged cheese, similar to fromage frais. It is not the same thing as cream cheese or cottage cheese. It is totally natural made from unhomogenized milk with no salt, preservatives or rennet added. Quark is one of the most nutritious and easily digested foods. It contains as many valuable proteins as meat, number of vitamins and minerals and is relatively low in fat. for these reason it are an important diet component of vegetarians, children and elderly people. It can be used in the diet of people with some medical problems, as it contains an important amino acid Methionine. It has been recommended as a meat replacement in cases of digestive disorders and liver problems.
Identical twin brothers Andriy and Taras Kogut grew up in the Carpathian Mountains of Ukraine. It was there they learnt the art of cheese making from their much loved grandmother who strongly believed in the health benefits of fresh yogurt. This very inspirational story of the brothers migrating to Australia with very limited English and starting a business and adapting to the culture and improving their language skills by going to farmers markets touched our hearts.
