Blue Bay Brie is a white mould cheese when young the cheese is mild. When the rind of the cheese ages it becomes musty and fungal on the nose, with little ammoniac aromas. The surface will start to break down, changing from its pristine white color to off-white tinged with orange at times. Delicious drizzled with toffee and walnuts for a simple and stunning dessert. Add to gourmet sandwiches or baguettes with smoked ham and vine-ripened tomatoes.
Identical twin brothers Andriy and Taras Kogut grew up in the Carpathian Mountains of Ukraine. It was there they learnt the art of cheese making from their much loved grandmother who strongly believed in the health benefits of fresh yogurt. This very inspirational story of the brothers migrating to Australia with very limited English and starting a business and adapting to the culture and improving their language skills by going to farmers markets touched our hearts. To add, their cheese is out of this world delicious and their motto of “all natural, all healthy, all fresh” makes it the ideal cheese that we are delighted to supply.
